The best soy sauce in the world comes to Golegã



Last month, Mendes Gonçalves began to receive the best soy sauce in the world thanks to a deal signed with Kikkoman.




Kikkoman ( is a soy sauce-producing company that has several factories all over the world, being the leading producer of this kind of sushi sauce. With this partnership deal, Mendes Gonçalves has now excellent soy sauce to bottle and sell through its own brands.



Where does the soy sauce come from? 


It is known all over the world for its Japanese name shoyu, but in reality its origin is Chinese. It originated sometime between 1134 and 246 BC, during the Zhou dynasty, from a rough paste made from musty and fermented soy beans. In the early times, the aim of this process was to solely preserve the beans. However, people realised that it could be used to preserve other kinds of food and shortly after, people started to use it as a condiment for seasoning food. It was brought to Japan in 710, but it was only in the 15th century that the Japanese created two new kinds of sauce: the liquid shoyu and the pasty condiment called miso. Even though the sauce has been subject to the industrialization process, it is important to note that, according to the traditional recipe, the sauce needs at least six months – between the fermenting and aging processes – to end up with the best textures and flavours.



How to use it:
Besides being commonly used in sushi and sashimi, soy sauce is also used to aromatise, give colour and replacing salt in a variety of salads and vegetable, meat, poultry, fish and seafood dishes.
